Creamy Sweet Corn & Sausage Pasta

I was so stoked when my CSA box this week included four ears of sweet corn.  Fresh corn is the best.  It can be a side dish, elevate even the most mundane pasta, and even become a dessert (and yes, you better believe this is happening in the near future).

In fact, I was so excited about the first corn of the season that I actually cooked on a Saturday night.  That may not sound earth-shattering, but anyone who knows me knows that Saturday night is reserved for Chinese food.  Specifically, one of three dishes from House of Chan five minutes from my house.  I call at around 5:02, pick it up 15 minutes later, and am comfortably ensconced on my couch shortly thereafter.  So for me to choose cooking on a Saturday night is pretty major.

And this pasta is totally worth it.  The sweet corn, summer squash, and onions meld with the mascarpone, Parmesan, and starchy water to make a comforting yet not heavy-feeling chunky sauce that covers the noodles and sausage for the perfect pasta marriage.  Add a little fresh basil and I’m in heaven.  The fact that it all came together in less than half an hour?  Even better. Birthday Red Wine Chocolate Cake!

Sometimes I have incredibly coherent, well-phrased, occasionally-beautiful thoughts. And then sometimes, like when I saw this recipe for the first time, I just blurt things out.

UM. WHAT. YES.

That’s pretty much how that conversation went in my head.

Last year my birthday fell on the Day of Atonement (Yom Kippur) which was very sad from a food and wine standpoint. This year, it fell on the 8th day, the day after the Feast of Tabernacles, and unfortunately I spent the majority of it in airports and airplanes trying to get home from Steamboat Springs. I did get to have a lovely dinner with my parents the night before, however, and brunch with my mom that morning before I left. And I happened upon a lovely wine bar (Cru) during my 3-hour layover in Denver and celebrated in my own way—with flights of Cabernet and some creamy tiramisu. So not all was lost.

I started a little ritual last year for my birthday, where I’d pick a dessert recipe that had really captured my imagination for some reason—maybe it felt a little fancy, needed a special occasion, was a little more work—and make it for my birthday. Except, scheduling being what it is in my life, it basically ends up being somewhere within a month window of my birthday. Which is kind of the same thing. I just wanted something that felt a little special, and an excuse to make something fun. Last year it was my vanilla almond cupcakes with homemade peach jam filling. And this year it’s this awesomeness.

Growing up, birthdays weren’t really a big thing. But to me, I like to make a tiny bit of fuss for it. Not go overboard, but just a little something special.

This cake really is special. First, there’s the Dutch cocoa (vs. regular), which has so much more depth than regular cocoa powder. Then you add the red wine and a hint of cinnamon, and this cake just perfectly encapsulates indulgence. It’s everything that’s great about being a grown-up. It’s rich but not sweet, super moist but dense, just amazing.

Creamy Chicken Pasta with Mushrooms

I’ve been trying to break out of my pasta rut a little bit lately. Don’t get me wrong, my rut is quite delicious—homemade pesto or sauteed/roasted veggies and sausage with some kind of cheese in the sauce, you can’t go wrong. But pasta can be so many things, and I really under-utilize its potential sometimes.

I found this recipe in my Cooking Light magazine and pulled it out quite a while ago. It’s been sitting on my couch since then, largely because I had to remember to buy mascarpone at Trader Joe’s. You can also find it at certain grocery stores, though not all the time. But good ol’ TJ’s always has it. The flavor was mild and yet really interesting. Giovanna’s Family Secret Tiramisu Recipe

Tiramisu is possibly the best food in the world. Sweet, cold, creamy, with the bite of coffee and liquor. But I rarely have it, and almost never make it. I’ve found that restaurants in the U.S. get something wrong (not sure what it is—too bready? flavor’s off?) and while actually making tiramisu isn’t difficult, finding the right ingredients IS.

My host mom from when I studied abroad, Giovanna, was the best cook, and gave me her family’s recipes for her pasta con pesto and tiramisu. And all of the sudden last Saturday night, I got it in my head that I HAD to make it for dinner the next evening. However, none of the stores had lady fingers (I called around), so I made my own. See separate post, the recipe I used is here. It was surprisingly easy. Or you could substitute madeleines or pound cake or angel food cake (the first would be better than the other two).
