I feel like I have to sneak one more winter-y recipe in here, even though it’s TOTALLY SPRING!

Butternut Squash Mac & Cheese

Oh man, I’m so glad it’s spring. Bring on farmers market fruit and veggies, grilling out, and foods that make me feel skinny. But first—hearty, cheesy, decadent (but not TOO decadent) girls’ night food.

We had a girls’ night at my place a couple months ago, and wanted something super easy, that I didn’t have to put a ton of time and effort into while we were all drinking wine and chatting.  This recipe came together very fast, and the only complicated piece was cutting up the butternut squash, but you could easily just buy it pre-cubed.  I even had a pretty helper—that girl’s got her priorities, has both a glass and bottle nearby! Kale & Quinoa Salad with Feta & Pecans

Healthy fooooooood!

That’s right, after biscuits, creamy chicken pasta, and more pasta (con pesto), I bring you this deeeelicious fiber-full, protein-stuffed gem.

I know, you think I’m insane and that weird green leafy thing with the little sprinkling of grain doesn’t look remotely appetizing. But that’s where you’re wrong! It is sweet and salty and crunchy and chewy and super filling. Give it a try. Go on.

Creamy Chicken Pasta with Mushrooms

I’ve been trying to break out of my pasta rut a little bit lately. Don’t get me wrong, my rut is quite delicious—homemade pesto or sauteed/roasted veggies and sausage with some kind of cheese in the sauce, you can’t go wrong. But pasta can be so many things, and I really under-utilize its potential sometimes.

I found this recipe in my Cooking Light magazine and pulled it out quite a while ago. It’s been sitting on my couch since then, largely because I had to remember to buy mascarpone at Trader Joe’s. You can also find it at certain grocery stores, though not all the time. But good ol’ TJ’s always has it. The flavor was mild and yet really interesting. The Pinterest hit known as “Man Pleasing” Chicken

I am not a mustard person, which is why I had pinned this recipe quite some time ago but have been finding reasons to put off trying it. But I had company coming over and needed a quick, easy dinner I could throw together.

I was really worried that the three main ingredients—dijon mustard, maple syrup, and a sweeter vinegar—would just make this way too intense, all the flavors fighting each other. But I was pleasantly surprised by how the flavors actually kind of balanced each other out, making the end result sweet, tangy, and with just enough bite to keep your interested.

The other nice flavor component was the rosemary. If you don’t have it the recipe is still great, but the fresh rosemary just adds another great layer of flavor with the mustard-maple sauce.
