Maple and Oat Scones

This is my new breakfast obsession.

I don’t know the last time I found a scone recipe I was so into.  Don’t get me wrong, I love scones, but they’re generally more of just a vehicle for condiments, an excuse to slather on jam or honey.  The scone itself is not so much the point.  But these scones are completely the point.

These are absolutely divine with a tiny bit of honey, but they’re honestly even amazing without anything at all.  There’s butter and maple syrup baked right in, so they really don’t need anything.  And they only took a few minutes to whip up and get in the oven.  Perfect for company, or just for you to devour by yourself with coffee and a blanket on a cold winter morning… [Read more…]

Maple Pudding Cake (Pudding Chômeur)

So somehow I tried out this recipe back in November and then it totally fell into a black hole in my memory and I moved on. Not because it wasn’t awesome, but…Thanksgiving maybe? Early senility? Wine?

Anyway, I had been weirdly fascinated by this recipe since finding it on Smitten Kitchen, despite the fact that caramel isn’t generally for me. But I do love pudding, and I do love sweet biscuit dough (which is essentially what this is), so really it should have been a home run.

Which, if you can’t tell from the glorious pictures, it was. It’s an odd little dessert, but quite easy and quite unique. I was a little obsessed. It’s strangely similar to a peach cobbler, but…caramel.

It was even surprisingly good re-heated the next day—a bit more dense and crystalized, less pudding-y, but still a delight. All-in-all, this is an interesting addition to the dessert arsenal. [Read more…]

Almond Cake with Fruit Compote (gluten-free)

I’ve amassed a fairly impressive arsenal of gluten-free dessert recipes over the past few years, since my friends John & Bridgette went GF.  And one of the biggest things I usually look for in these recipes is that they’re naturally free of gluten, rather than using weird ingredients to try and approximate the texture and taste of wheat recipes.

That’s why I’ve developed quite an affinity for almond meal.  It’s super yummy, plus it has an awesome grainy texture—not perfect for every type of recipe, but helps provide a “crumb” to certain cakes and pastries.  It’s also pretty easy to work with and really forgiving.  I’ve kind of been on an almond cake kick lately for myself, because the flavor is perfect for this summer-to-fall transition time we’ve been in.

This recipe is from Cookie + Kate, and as soon as she posted it, I was dying to give it a try.  The almond cake is the star, and is taken up a level by the combination of orange zest and cinnamon in the batter, and the maple syrup makes it super moist.  It’s also literally the easiest batter to throw together.  Then the slightly-sticky cake is stopped with a roasted fruit compote, which provides additional juice dripping down into the cake.  I went with pears and raspberries, which in hindsight was way too much juice to deal with.  But you can use whatever strikes your fancy.  This is awesome as leftovers, particularly for breakfast.

Strawberry Chia Jam (no pectin)

It’s really only been three weeks, but it feels like it’s been a year since I posted! It’s not that I don’t have anything TO post…on the contrary, I have quite the backlog. But crazy workload plus travel has kept me away.

I’m easing back in with this no-fuss strawberry jam recipe. Why jam, you ask?

Well, I just got back from spending a week and a half in the Scottish highlands and a number of the islands, plus a day in Edinburgh, which meant tons of pub food, breakfast fry-ups, and sticky toffee pudding. But one of my absolute favorite things when traveling in the U.K. is a plain scone with butter and strawberry jam. Their scones have an unreal crumb…my mission in life is to somehow recreate it. And it’s perfect with just some simple butter and jam. Boy, I ate a ton of these!

This jam isn’t quite the same (for that, you can use my super easy balsamic strawberry jam recipe, also no pectin). But it’s got the interesting addition of chia seeds for texture and thickening, it’s a little less sweet (I barely put any sweetener in), and it’s super easy. You can get it started and then focus on making dinner or baking something, just stopping to give the jam a quick stir every so often. [Read more…]

Dutch Baby (or German Pancake)

Wow, I can’t believe it’s been so long since I posted last! Things have been nuts with work, and some travel as well. While I haven’t cooked much, I actually have a backlog of recipes that I just haven’t been able to find the time to put together and post.

July has been a whirlwind. My mom came for a visit, which was great. We cooked an awesome dinner one night, but I also talked her into getting burgers, Thai, and Chinese takeout. Which was bomb. Then last week I was up in New York for work, then spent a long weekend in L.A. with a bestie hiking the Hollywood Hills and drinking copious quantities of wine. On top of insane work hours, what few minutes of free time I can squeeze out are taken up by the last stages of planning for our Scotland trip right now (!!).

These aren’t something I grew up with, but it was the recipe for apple pie german pancakes that gave me the idea. I had some leftover batter, and so I looked up what to do with it. Last weekend after my insane 4th of July (which involved accidentally hiking over 15 miles and burning a billion calories), I woke up the next morning feeling like an 80-year-old, kind of fell/rolled out of bed, and got my coffee made like usual. But as I sat on the couch my stomach demanded something more. After poking through Pinterest for a hot second, I had talked myself into this glorious breakfast.

By all rights, I shouldn’t like these pancakes, because I have this weird hangup about hot and fruit. Fruit shouldn’t be hot. I take fruit crisp out of the oven and put it right in the freezer. Maple Peanut Butter Chocolate Chip Oatmeal Cookies (Gluten-Free)

I’ve been super absent here lately.

It’s mostly because I’ve been working eleventy-billion hours, which means I’ve been exhausted and never home. And the tiny bit of free time that I’m able to grab has been devoted to trip planning for two big upcoming international trips. So suffice to say, I haven’t been cooking much lately, and haven’t had the energy to try new recipes. And the few new recipes I have tried have been kind of meh. And you deserve better than meh.

These are definitely not meh. They’re not the most amazingly glorious things you’ve ever put in your mouth, but they are delicious and sweet and pretty darn healthy when it comes down to it. As I’ve mentioned a few times, I’m always on the lookout for good gluten-free recipes that use normal ingredients.

They have an interesting texture—the dough acts a lot like no-bake cookie dough, quite sticky. And the baked cookies are crumbly (not dry, just break apart easily), and super chocolate-y, and really quite sweet.

These are made with oat flour, peanut butter, coconut oil, and maple syrup. You can use whatever kind of chocolate chips you want, but I tried these huge Ghiradelli dark chocolate discs. SO. MUCH. CHOCOLATE.

Overall these were a great gluten-free addition to my repertoire. They were super easy to throw together, and healthy enough that I didn’t feel guilty sneaking one or two with my coffee the next morning! [Read more…]

Banana Chocolate Coffee Muffins with Whole Wheat Flour

I’ve really slipped on my healthy breakfast train the last month or two. I had family in town, then was out of the country for a couple weeks, and have been buried under work and lack of sleep. So I just haven’t had the time or energy to do much baking or cooking to prepare for each coming week. Thankfully, over 4th of July weekend I finally got back on track with these beauties.

I really haven’t done a lot of baking lately, partly because when I use my stove and oven it makes my kitchen feel like Death Valley during the summer. My A/C can’t come close to keeping up. But I decided it was worth it to give these guys a try. I mean, coffee and chocolate in a muffin together?? Sign me up!

As much as I love whole wheat flour, I was a little nervous about using it exclusively, since sometimes that can make things a little too dry and dense. I shouldn’t have worried, though—these were moist and light even as reheated leftovers at work the next day. And the dark chocolate chips are these gooey little nuggets of awesome. For something that literally takes like 5 minutes to stir together, the return on this is totally worth it! [Read more…]

Peanut Butter Quinoa Granola

As I’ve mentioned here before, granola’s never really been my thing. That was, until I tried this maple nut quinoa granola recipe, and was instantly hooked on the light, crispy clusters. Gone are the days of tough, chewy oats. It’s a new granola day.
