I have all the best intentions of loving granola, and then I pour my milk in and try to eat it, and I chew. And chew. And chew. And then my jaw and teeth hurt. But this granola is pretty special.

Quinoa Nut Maple Granola with Yogurt & Strawberries

While it has a traditional base (oats and nuts, some coconut), it brings in a number of interesting flavors and textures. Chia, quinoa, and sunflower seeds provide extra crunch and protein, craisins and dried cherries substitute for raisins (which I’m not a huge fan of), and maple syrup and coconut oil hold it all together. I threw in some flaxseed, wheat germ, and hazelnuts, for good measure, since I didn’t have the pumpkin seeds or buckwheat the recipe called for.

Kale & Quinoa Salad with Feta & Pecans

That’s right, after biscuits, creamy chicken pasta, and more pasta (con pesto), I bring you this deeeelicious fiber-full, protein-stuffed gem.

I know, you think I’m insane and that weird green leafy thing with the little sprinkling of grain doesn’t look remotely appetizing. But that’s where you’re wrong! It is sweet and salty and crunchy and chewy and super filling. Give it a try. Go on.

Sweet & Savory Chicken Quinoa

I know, I know. You’re thinking, “Jessica, it’s the middle of winter, we just got hit by a cold spell/blizzard/snowpocalypse and you want me to eat healthy quinoa instead of the comfort food I was craving??? Girl, you are nuts.”

I get that. It’s cold and I want a blue cheese burger, fries, and a few glasses of wine. But in a weird way I’ve also been craving something healthier, to get a tiny bit of that summer feeling. And this quinoa dish is also incredibly hearty and filling.

The flavors are so light and summery, a bright spot in the chilly, rainy winter we’re having. This recipe was also very easy to throw together, and great as leftovers as well. I used a mixture of both red and white quinoa since I had them both on-hand, but you could use either separately as well.
